There are some steakhouse classics that don’t need reinventing. They simply need to be done exceptionally well. At Carson’s Prime Steaks & Famous Barbecue, prime rib is one of them.
Our prime rib of beef is slow roasted daily and carved to order, creating the tenderness, rich beef flavor and generous presentation that make a traditional prime rib dinner something special. Served with savory au jus and creamy horseradish, it’s an old school steakhouse favorite that fits naturally alongside the prime steaks and famous barbecue Carson’s has been known for since 1977. Served fresh daily until we run out!
And now, Carson’s prime rib has another distinction to celebrate.
We’re proud to announce that Carson’s Prime Steaks & Famous Barbecue in downtown Milwaukee has been selected for the 2026 Wisconsin Prime Rib Trail, a celebration of one of Wisconsin’s most beloved dining traditions. Created in partnership by Gather Wisconsin and the Wisconsin Beef Council, the Prime Rib Trail brings together destinations across Wisconsin where diners can enjoy this classic beef tradition.
Carson’s Milwaukee is featured as Stop #4 on the trail.
For us, the recognition is especially meaningful. Prime rib isn’t something we introduced for a trend or special promotion. It’s part of the classic steakhouse experience Carson’s has been serving for generations.

What Makes Carson’s Prime Rib Special?
Great prime rib of beef begins with patience. Unlike an individually grilled steak, prime rib is prepared as a roast. At Carson’s, ours is slow roasted daily, allowing it to develop the tenderness and deep beef flavor that distinguish a great prime rib.
When it’s time to serve, each portion is carved to order and presented with rich au jus and creamy horseradish. The result is uncomplicated in the best possible way: beautifully prepared beef, a generous cut and the kind of classic steakhouse dinner that never goes out of style.
Complete the Carson’s Prime Rib Dinner
Of course, the prime rib is only the beginning. Pair it with Carson’s Au Gratin Potatoes, Double Baked Potato or Creamed Spinach and a glass of red wine for a traditional steakhouse combination. It’s the kind of dinner meant to be enjoyed rather than rushed. And if you’ve saved room afterward, even better.
You don’t have to be following the Wisconsin Prime Rib Trail to find Carson’s delicious prime rib. Guests can enjoy this Carson’s steakhouse classic at our restaurants in Chicago, Deerfield and Milwaukee. Served fresh daily until we run out! When reserving, feel free to mention how many slices you would like 24 hours(+) in advance.
